I have to wait months for my quilter as well but she pencils me into her calendar and contacts me by email or by telephone if she has a change in her plans. She never wants a quilt delivered to her before she's ready for it. That's her policy. Around here the popular MQers are so busy and booked so far out that we often have to wait a couple of months or more. I have no problem at all with bringing a top in and leaving it with the quilter ahead of time. Sometimes she will finish up a quilt earlier than anticipated and have time to move things forward.
